Equipment

  • Large skillet or wok (for even heat and quick cooking)
  • Mixing bowls
  • Cutting board
  • Sharp knife
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Small bowl for sauce

Ingredients

For the Chicken Filling:

  • 500 g ground chicken
  • 2 tablespoons neutral oil like canola or vegetable oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1/4 cup green onions chopped
  • 1/2 cup water chestnuts finely chopped
  • 1 small carrot finely diced
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1/2 teaspoon black pepper

For Serving:

  • 1 large head butter lettuce or iceberg lettuce leaves separated and washed
  • Extra green onions for garnish
  • Sesame seeds optional

Instructions

Step 1: Prepare Ingredients

  • Wash and dry the lettuce leaves thoroughly so they stay crisp and don’t water down the filling. Chop vegetables evenly for a consistent texture.

Step 2: Cook the Chicken

  • Heat oil in a large skillet over medium heat. Add ground chicken and cook until it turns white and lightly golden, breaking it apart as it cooks.

Step 3: Add Aromatics

  • Add garlic and ginger. Stir for 1–2 minutes until fragrant—this builds the base flavor.

Step 4: Add Vegetables

  • Mix in water chestnuts, carrots, and green onions. Cook for 2–3 minutes to keep them slightly crunchy.

Step 5: Add Sauce

  • Pour in soy sauce, hoisin sauce, oyster sauce, sesame oil, and brown sugar. Stir well and cook for another 3–4 minutes until glossy and slightly thickened.

Step 6: Assemble Wraps

  • Spoon the warm chicken mixture into lettuce cups. Don’t overfill—leave room for folding.

Step 7: Serve

  • Garnish with green onions and sesame seeds. Serve immediately while warm.

Notes

  • Always use fresh ginger and garlic for authentic flavor
  • Keep heat medium-high for proper stir-fry texture
  • Taste and adjust seasoning before serving
  • Use butter lettuce for soft, flexible wraps
