- 1 large loaf Tuscan bread or Italian bread
- 1/2 cup unsalted butter softened
- 2 tablespoons olive oil
- 5 garlic cloves minced finely
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 cup shredded mozzarella cheese
Optional Additions
- Crushed red pepper flakes
- Extra Parmesan cheese
- Fresh basil
- Roasted garlic instead of raw garlic
Step 1: Preheat the Oven
Preheat your oven to 375 degrees Fahrenheit.
Line a baking sheet with aluminum foil for easier cleanup. Trust me on this one because melted cheese loves sticking to pans.
If your oven runs hot like mine does, check the bread a couple minutes early.
Step 2: Slice the Bread
Place the loaf on a cutting board and use a bread knife to cut it in half lengthwise.
Try not to press down too hard while slicing or the bread gets flattened. The first time I made this Wegmans Garlic Tuscan Bread Recipe, I squished the whole loaf a little and the texture wasn’t nearly as good.
Place both bread halves cut-side up on the baking sheet.
Step 3: Make the Garlic Butter Mixture
In a small bowl, combine the softened butter, olive oil, minced garlic, garlic powder, Italian seasoning, salt, black pepper, Parmesan cheese, and chopped parsley.
Mix until everything looks evenly combined.
The smell at this point already starts smelling like restaurant garlic bread.
I noticed fresh garlic gives the best flavor, but if you’re in a rush, jarred garlic still works okay.
Step 4: Spread the Mixture Over the Bread
Use a spoon or spatula to spread the garlic butter mixture evenly across both halves of bread.
Make sure you spread all the way to the edges because dry corners are disappointing.
Don’t worry if the mixture looks thick in spots. It melts down while baking.
Step 5: Add the Cheese
Sprinkle shredded mozzarella evenly over the bread.
Then add a little extra Parmesan on top if you want a crispier cheesy layer.
I accidentally overloaded the cheese once and it slid right off while cutting. Still tasted good though.
Step 6: Bake the Bread
Bake uncovered for about 12 to 15 minutes.
The cheese should melt completely and the edges should turn golden brown.
You’ll notice the garlic smell filling the kitchen after about 8 minutes.
If you like crispier cheese, switch the oven to broil for the last 1 to 2 minutes. Just watch carefully because it browns fast.
Step 7: Slice and Serve
Remove the bread from the oven and let it cool for about 2 minutes.
Slice into thick pieces using a bread knife.
The crust should sound slightly crisp while cutting, but the middle stays soft and buttery.
Serve warm.
- Use bakery-style Italian bread for the best texture.
- Fresh garlic tastes stronger and more authentic.
- Let the butter soften naturally instead of microwaving it.
- Add mozzarella right before baking so it melts evenly.
- Broil briefly at the end for extra crispy edges.
- Sprinkle fresh parsley after baking for brighter flavor.
