Step 1: Prepare the Chicken

  • If your chicken isn’t already cooked, place chicken breasts into a pot of lightly salted water.
  • Bring to a gentle boil and cook for about 15 to 20 minutes until fully cooked.
  • Let the chicken cool slightly before chopping or shredding.
  • You can use:
  • Poached chicken
  • Rotisserie chicken
  • Baked chicken
  • Grilled chicken
  • I usually prefer rotisserie chicken because it gives the salad extra flavor and saves time.

Step 2: Chop the Ingredients

  • Dice the celery into small pieces.
  • Finely chop the parsley and onion if using.
  • Try to keep everything evenly sized so every bite has balanced texture.

Step 3: Make the Dressing

  • In a large mixing bowl, combine:
  • Mayonnaise
  • Dijon mustard
  • Lemon juice
  • Relish
  • Onion powder
  • Garlic powder
  • Salt
  • Black pepper
  • Mix until smooth and creamy.

Step 4: Combine Everything

  • Add the chicken, celery, parsley, and onion into the bowl.
  • Fold everything together gently until evenly coated.
  • Avoid overmixing because you want the chicken pieces to stay tender.

Step 5: Chill

  • Cover the bowl and refrigerate for at least 1 hour.
  • This step really matters because it allows the flavors to blend together.
  • Honestly, the salad tastes even better after a few hours.
