For the Salmon Patties
- 500 g fresh salmon fillets skin removed
- 1 small onion finely chopped
- 2 garlic cloves minced
- 1 tablespoon fresh dill chopped
- 2 tablespoons fresh parsley chopped
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 egg
- 1/2 cup breadcrumbs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil for cooking
For Serving
- 4 brioche burger buns
- Lettuce leaves
- Sliced tomatoes
- Red onion slices
- Cucumber slices
- Tartar sauce or mayonnaise
Step 1: Prepare the Salmon
Start by chopping the fresh salmon into small chunks. You can do this by hand for a chunkier texture or pulse it a few times in a food processor.
I personally prefer leaving a few larger pieces because it gives the burgers a lovely flaky texture instead of turning them into fish paste.
Transfer the salmon to a large mixing bowl.
Step 2: Add the Flavorings
Add the chopped onion, garlic, dill, parsley, lemon zest, lemon juice, Dijon mustard, egg, breadcrumbs, salt, and black pepper.
Mix gently until everything is evenly combined.
The mixture should hold together when pressed. If it feels too wet, add another spoonful of breadcrumbs.
Step 3: Shape the Patties
Divide the mixture into four equal portions and shape them into burger patties.
Try not to compress them too tightly. A lighter touch keeps the texture tender.
Place the patties on a parchment-lined tray.

Heat olive oil in a frying pan over medium heat.
Carefully place the salmon patties into the pan and cook for about 4 to 5 minutes on each side.
The outside should become crisp and golden brown while the inside stays moist.
Avoid flipping them too early. Let the crust develop properly first.
Step 7: Assemble the Burgers
Spread tartar sauce or mayonnaise onto the buns.
Layer with lettuce, tomato slices, cucumber, red onion, and the cooked salmon patty.
Top with the other half of the bun and serve immediately.
