Step 1: Gather and Measure Everything

  • Before starting, measure out all your ingredients into small bowls or directly onto your cutting board area. This recipe moves quickly, and having everything ready keeps you from forgetting something. The first time I made this sauce, I completely forgot the vinegar until after I tasted it. It needed that little tangy kick.
  • If your honey feels stiff or cold, place it in a small microwave-safe bowl and warm it for about 10 seconds. You don’t want it hot, just loose enough to pour easily.

Step 2: Mix the Creamy Base

  • In a medium mixing bowl, add the mayonnaise, Dijon mustard, and yellow mustard. Stir slowly with a whisk or spoon until the mixture looks smooth and even in color.
  • At this point, the sauce will look pale yellow and thick. Make sure there aren’t streaks of mayo left behind because they’ll affect the texture later.
  • I noticed using a whisk instead of a spoon helps the sauce come together faster, especially if your mayo is cold from the fridge.

Step 3: Add the Honey and Hot Sauce

  • The first time I skipped paprika because I didn’t think it mattered much, but honestly, the sauce tasted flatter without it.

Step 5: Let the Sauce Rest

  • Once mixed, cover the bowl and refrigerate the sauce for at least 20 minutes.
  • This part actually matters. Right after mixing, the flavors can taste separate and a little sharp. After chilling, the sauce thickens slightly and the sweet-spicy balance becomes smoother.
  • If you’re in a hurry, you can still use it immediately, but I noticed the texture and flavor improve a lot after resting.

Step 6: Serve and Adjust if Needed

  • If you want more sweetness, add another teaspoon of honey. If you want extra heat, mix in a little more hot sauce or a pinch of cayenne pepper.
