Ingredients
  

  • 2 pounds 900g Yukon Gold potatoes (or Maris Piper)
  • 100 g 7 tablespoons unsalted butter
  • 120 ml ½ cup heavy cream
  • 2 teaspoons salt for boiling water
  • ½ teaspoon salt for seasoning, adjust to taste
  • ¼ teaspoon freshly ground black pepper

Optional (for extra flavor):

  • 1 garlic clove lightly crushed
  • Fresh chives for garnish

Instructions
 

Step 1: Prepare the potatoes

  • Peel the potatoes and cut them into evenly sized chunks. This helps them cook at the same rate, which is very important for texture.

Step 2: Boil properly

  • Place the potatoes in a large pot and cover them with cold salted water. Bring to a gentle boil and cook for about 15–20 minutes, or until fork-tender.

Step 3: Drain and dry

  • Drain the potatoes thoroughly using a colander. Then return them to the hot pot for 1–2 minutes over low heat. This step removes excess moisture and makes the mash fluffy instead of watery.

Step 4: Warm butter and cream

  • In a small saucepan, gently heat the butter and cream together. Do not let it boil—just warm enough so the butter melts completely.

Step 5: Mash or rice

  • Pass the potatoes through a potato ricer or mash them until smooth. Avoid over-mixing, as it can make them gluey.

Step 6: Combine

  • Slowly add the warm butter and cream mixture into the potatoes. Stir gently until everything is fully combined and smooth.

Step 7: Season and finish

  • Add salt and black pepper to taste. Stir gently and serve immediately while hot.

  • Always start with cold water when boiling potatoes
