  • Spatula
  • Saucepan (for strawberry puree)
  • Cooling rack

Ingredients

For Strawberry Puree

  • 2 cups fresh strawberries hulled
  • 2 tablespoons sugar

For Cake Batter

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 3/4 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup strawberry puree cooled

For Frosting

  • 1 cup unsalted butter softened
  • 3 1/2 cups powdered sugar
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

Step 1: Make Strawberry Puree

  • Wash and hull the strawberries. Add them to a blender and blend until smooth.
  • Pour the puree into a small saucepan and add sugar.
  • Cook on low heat for about 5–7 minutes until slightly thickened.
  • Let it cool completely before using.
  • This step is what gives Edgar's Strawberry Cake Recipe its deep natural strawberry flavor.

Step 2: Prepare the Dry Ingredients

  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • Set aside.
  • This helps ensure even texture in the cake.

Step 3: Cream Butter and Sugar

  • In a large bowl, beat butter and sugar until light and fluffy.
  • This usually takes about 2–3 minutes.
  • The mixture should look pale and creamy.

Step 4: Add Eggs and Vanilla

  • Add eggs one at a time, mixing well after each addition.
  • Then add vanilla extract and mix again.

Step 5: Combine Wet and Dry Ingredients

  • Add the dry ingredients in batches, alternating with buttermilk.
  • Mix gently until just combined.
  • Do not overmix.

Step 6: Add Strawberry Puree

  • Fold in the cooled strawberry puree.
  • This is the moment the batter transforms into a beautiful pink strawberry mixture.

Step 7: Bake the Cake

  • Divide batter evenly into prepared cake pans.
  • Bake at 350°F (175°C) for about 28–30 minutes.
  • Insert a toothpick in the center; it should come out clean.
  • Let cakes cool completely.

Step 8: Make Frosting

  • Beat butter until smooth.
  • Add powdered sugar gradually and mix until fluffy.
  • Add strawberry puree, vanilla, and salt.
  • Beat until creamy and smooth.

Step 9: Assemble the Cake

  • Place one cake layer on a plate.
  • Spread frosting evenly.
  • Add second layer and frost the entire cake.
  • Decorate with fresh strawberries if desired.
