Equipment

  • Medium saucepan
  • Whisk
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board

Ingredients

  • 2 cups white American cheese or good melting cheese blend
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 1 small jalapeño finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground cumin
  • Salt to taste
  • Optional: diced green chilies or hot sauce

Instructions

Step 1: Start the Base

  • In a medium saucepan over low heat, melt the butter slowly. This creates the base for your queso.

Step 2: Add Milk and Cream

  • Pour in milk and heavy cream. Stir gently and heat until warm—do not let it boil.

Step 3: Melt the Cheese Slowly

  • Add shredded cheese gradually while whisking continuously. This is the most important step for a smooth texture.

Step 4: Add Seasonings

  • Stir in garlic powder, onion powder, cumin, and salt. Let the flavors blend slowly.

Step 5: Add Heat

  • Add chopped jalapeños or green chilies. Adjust spice level based on preference.
  • Step 6: Adjust Consistency
  • If too thick, add a splash of milk. If too thin, simmer gently while stirring.

Step 7: Serve Warm

  • Serve immediately while smooth and creamy.

Notes

  • Always cook on low heat
  • Add cheese slowly for smooth texture
  • Whisk continuously to avoid clumps
  • Use freshly shredded cheese for best melt
  • Don’t rush the process
